Matured in old oak hogsheads, the base blend is over 20 years old now but has an average age of 5 years old. This is calculated on the basis that we take out 20% out of the barrels every year for bottling and replace it with current vintage material. The barrels themselves suffer the summers under a hot tin shed where they concentrate flavour through evaporation. This is where we also get the rancio flavour or character that comes from aging in barrel. Enjoy.
